Easy Sushi Bowls – A Quick Lunch or Dinner for the Whole Family

If you love sushi but don’t love the time, cost, or mess of rolling it at home, these Easy Sushi Bowls are your new best friend. They’ve got all the fresh, delicious flavors you crave, but you can have them on the table in less than 20 minutes.


They’re customizable (hello, picky eaters!), budget-friendly, and make a fun hands-on dinner where everyone builds their own bowl. You can use crab meat, cooked shrimp, smoked salmon, or even leftover grilled fish — whatever works for your crew.

Ingredients (Serves 4)

  • 3 cups cooked white or brown rice (or sushi rice if you’re feeling fancy)

  • 8 oz cooked crab meat (or protein of choice — shrimp, salmon, tuna, tofu)

  • 1 cucumber, diced or sliced into matchsticks

  • 1 avocado, diced

  • 1–2 sheets roasted seaweed (nori), cut into small strips

  • Soy sauce, for drizzling

  • Spicy mayo (mix ½ cup mayo with 1–2 tbsp sriracha, to taste)

  • Optional toppings: sesame seeds, kimchi, edamame, shredded carrots


Instructions

  1. Cook the rice: Use whatever rice you have on hand — leftover rice works great. For a more authentic flavor, stir in a splash of rice vinegar and a pinch of sugar after cooking.


  2. Prep the toppings: Slice cucumber and avocado, cut the seaweed into strips, and prepare your protein. If you’re using fish, make sure it’s cooked or sushi-grade.


  3. Assemble your bowls: Divide the rice between four bowls. Arrange crab (or chosen protein), cucumber, avocado, and seaweed on top.


  4. Add the flavor: Drizzle with soy sauce and a generous zigzag of spicy mayo. Sprinkle with sesame seeds for extra crunch.


  5. Serve and customize: Set out extra toppings so everyone can make it their own — more avocado for the avocado lovers, extra spice for the heat seekers.
