Meg's Favorite Trader Joes Salad

The yummiest Trader Joes salad!! A total crowd-pleaser and one you’ll want on repeat! One stop to Trader Joes will get you everything you need.

Ingredients:

  • 1 bag baby arugula, chopped or left as is

  • 1 cup orzo pasta, cooked and cooled in refrigerator

  • 1 container Trader Giotto’s fresh bruschetta sauce, liquid drained (found in refrigerator section)

  • 1 cup dried cranberries

  • 3/4 can corn, drained

  • ¾ cup salted pepitas or pumpkin seeds

  • 1 cup Trader Joes Quattro Formaggi shredded cheese

  • ½-¾  bottle Trader Joe’s Parmesan Ranch Dressing (found in refrigerator section)

Instructions:

  1. Cook the orzo, drain, and place in refrigerator to cool. 

  2. Find a large platter to assemble everything. Align the ingredients side by side on top of the bed of arugula.

  3. Pour the dressing over top just before serving. Toss all together and enjoy!


Let me know how you love it! I forgot to take a picture of the final salad tossed with dressing because everyone was already starting to dig in... but it sure is as yummy as it looks!
