One-Pan Wonder: Easy Sheet Pan Tortellini

If you’re anything like me, dinner needs to check three boxes: quick, delicious, and minimal cleanup — bonus points if it feeds the whole family with zero complaints. Enter: Sheet Pan Tortellini. It’s comforting, colorful, and loaded with flavor (and veggies!). Best of all? It comes together in just 35 minutes, and only dirties one pan.

What You’ll Need:

Ingredients:
2 cloves garlic (grated or minced)
½ cup finely grated Parmigiano Reggiano
2 tablespoons olive oil
¾ teaspoon kosher salt
9 ounces tortellini (any variety – cheese, spinach, your call!)
1 bell pepper (any color), sliced
½ red onion, sliced
12 ounces kielbasa or chicken sausage, sliced
10 ounces cherry tomatoes
1 (5-ounce) bag spinach
½ cup ricotta cheese
How to Make It:
Preheat & Prep: Preheat your oven to 400°F and bring a large pot of heavily salted water to a boil.
Flavor Base: In a large bowl, whisk together the garlic, Parmigiano Reggiano, olive oil, and salt.
Boil Tortellini: Cook the tortellini according to the package instructions. Drain and toss it into the bowl with your flavor-packed oil and cheese mixture.
Toss the Veggies + Protein: Slice the bell pepper, onion, and sausage. Toss them into the bowl along with the cherry tomatoes and spinach. Mix until everything’s well coated.
Sheet Pan Magic: Spread the mixture onto a large sheet pan. Roast for 25 minutes until the edges are golden and the veggies are tender.
Finish Strong: Remove from the oven and dollop with ricotta. Serve immediately and enjoy!
