A mild, cozy dinner your whole family will love

If you need a simple, throw-it-in-and-walk-away dinner that still feels comforting and flavorful, this Trader Joe’s Crock Pot Curry is about to become a staple.

It’s creamy, mild (very kid-friendly!), and made with just a handful of ingredients. No complicated spice blends. No standing over the stove. Just real food, minimal prep, and a house that smells amazing by dinner time.

Why We Love This Recipe

  • Minimal prep

  • One-pot meal

  • Mild flavor (great for kids)

  • Easy to customize with whatever veggies you have

  • Perfect for busy weeknights

This is one of those meals that feels a little special without requiring extra effort — and that’s the sweet spot for moms.

Ingredients

  • 1 bottle Trader Joe’s Yellow Curry Sauce

  • 1 can coconut milk or coconut cream (13–14 oz)

  • 1 package chicken thighs (about 1.5–2 pounds)

  • Veggies of choice:

    • Onion

    • Bell peppers

    • Broccoli

    • Zucchini

    • Potatoes

  • Salt and pepper to taste

How to Make It

  1. Place chicken thighs in the bottom of your crock pot.

  2. Chop your vegetables and add them on top.

  3. Pour in the entire bottle of yellow curry sauce.

  4. Add one can of coconut milk or cream.

  5. Season lightly with salt and pepper.

  6. Stir gently to combine.

Cook on low for 4 hours.

That’s it.

Once finished, the chicken should be tender and easy to shred or break apart with a spoon. Stir everything together before serving.

How to Serve

Spoon the curry over warm rice and serve with naan bread on the side for dipping. The sauce is creamy and mild, so it’s perfect for little ones who might not love spicy foods.

If you prefer a thicker sauce, coconut cream will make it richer. Coconut milk keeps it a little lighter but still creamy.

Make It Your Own

  • Add extra potatoes to make it heartier.

  • Swap chicken thighs for breasts if you prefer leaner meat.

  • Toss in spinach at the end for added greens.

  • Add red pepper flakes for adults who like heat.

If you try it, let us know what veggies you added. And don’t forget the naan — it’s the best part! You can find it in the freezer section at Trader Joes and it heats in the oven in less than 5 minutes.

This is one of those dependable dinners that makes life feel easier. It’s nourishing, comforting, and simple — exactly what we need in a busy season.
